Apple Cake in a Long Pan
- Flour, 4 1/2 cups (500g)
- Sugar, 3 cups (600g)
- Brown sugar, 1 cup (200g)
- Milk, 1 cup (250ml)
- Eggs, 4
- Butter, 1 cup (200g), softened
- Cinnamon, 1 1/2 tsp
- Baking powder, 2 tsp
- Apples, 3
1. Preheat your oven to 350°F (175°C).
2. In a large mixing bowl cream together 225g/1 cup butter and 400g/1 3/4 cups sugar until light and fluffy.
3. Beat in 3 large eggs one at a time making sure each egg is fully incorporated before adding the next.
4. In a separate bowl whisk together 450g/2 1/4 cups all-purpose flour 12g/2 teaspoons baking powder and 6g/1 teaspoon ground cinnamon.
5. Gradually add the dry ingredients to the wet ingredients stirring until just combined.
6. Pour in 150ml/5 fl oz milk and mix until smooth.
7. Peel core and slice 3-4 apples into thin wedges.
8. Grease a 23x33cm or 9x13-inch baking dish and arrange half of the apple slices in the bottom of the dish.
9. Pour half of the batter over the apples then repeat the layers.
10. Sprinkle the top of the cake with 50g/1/2 cup brown sugar.
11. Bake for 45-50 minutes or until a toothpick inserted into the center of the cake comes out clean.
12. Remove from the oven and let cool for 10 minutes before serving.
