Asian-Inspired Beef Stir-Fry
- 300g / 10 oz beef strips
- 3 green onions
- 1 package bok choy
- 3 bell peppers, any color
- 2 tbsp / 30ml vegetable oil for frying
1. Heat 15ml or 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat about 200°C or 400°F.
2. Add 225g or 8 ounces beef strips and cook until browned about 3-4 minutes.
3. Remove the beef from the skillet and set aside.
4. Add the remaining 15ml or 1 tablespoon of vegetable oil to the skillet.
5. Add 2 sliced bell peppers and cook until tender about 3-4 minutes.
6. Add 1 bunch of bok choy and 4 chopped green onions to the skillet and cook until the bok choy is slightly wilted.
7. Return the beef to the skillet and stir to combine with the vegetables.
8. Season with salt and pepper to taste.
9. Serve the beef stir-fry over a bed of 225g or 8 ounces cooked rice.
10. Garnish with toasted sesame seeds and chopped fresh cilantro.
