Autumn Apple Crisp with Coconut and Oats

- 500g / 3 large apples, peeled and sliced
- 115g / 1/2 cup light syrup
- 190g / 1 1/2 cups rolled oats
- 115g / 1 cup shredded coconut
- 150g / 5.3 oz unsalted butter, softened
- 15g / 1 tbsp light syrup
- 250g / 2 cups all-purpose flour
- 180g / 3/4 cup granulated sugar
1. Preheat the oven to 350°F or 175°C.
2. In a large mixing bowl, combine 200g or 1 cup of sugar, 250g or 2 3/4 cups of flour, and 250g or 2 3/4 cups of oats.
3. Mix well until the mixture becomes crumbly.
4. Add 115g or 1/2 cup of softened butter and mix until it resembles coarse crumbs.
5. In a separate bowl, whisk together 120ml or 1/2 cup of light syrup and 50g or 1/2 cup of shredded coconut.
6. Arrange the sliced apples in a 23x33cm or 9x13 inch baking dish.
7. Pour the coconut-syrup mixture over the apples, ensuring they are evenly coated.
8. Top the apples with the crumbly oat mixture, spreading it evenly to cover the entire surface.
9. Bake for 40-45 minutes or until the topping turns golden brown and the apples are tender.
10. Serve warm and enjoy!
