Bacon and Parmesan Potato Cake
I love making these potato cakes for gatherings - they're always a hit. Smoky bacon, nutty parmesan, and fragrant herbs give them a depth of flavor that's hard to resist. They're perfect for a dinner party or casual get-together, and they're sure to disappear quickly.
Ingredients
  • 125ml/1/2 cup Vegetable Oil
  • 250g/8.8 oz Parmesan Cheese, grated
  • 150g/5.3 oz Bacon
  • 400g/14.1 oz Fresh Potatoes
  • 3g/0.1 oz or a pinch of Salt
  • 2g/0.07 oz or 4-6 grinds of Pepper
  • 6g/0.2 oz or 1/2 Garlic Clove
Instructions

1. Preheat the oven to 400°F or 200°C.

2. Peel the potatoes and grate them, then squeeze out as much water as possible from the grated potatoes.

3. In a large bowl, combine the grated potatoes, 2-3 tablespoons of vegetable oil, 1/2 cup or 120 grams of parmesan cheese, and a pinch of salt and pepper. Mix everything well until the ingredients are evenly distributed.

4. Cut 4-6 slices of bacon into small pieces and fry them in a pan over medium heat until crispy. Remove the cooked bacon from the pan and drain the excess fat.

5. Add the cooked bacon, 1-2 cloves of minced garlic, and a pinch of pepper to the potato mixture. Mix until the ingredients are well combined.

6. Using your hands, shape the mixture into small patties, roughly 1 1/2 inches or 3.8 cm in diameter and 1/2 inch or 1.3 cm thick. You should end up with around 8-10 patties.

7. Place the patties on a baking sheet lined with parchment paper, leaving about 1 inch or 2.5 cm of space between each patty. Bake in the preheated oven for 20-25 minutes, or until the patties are golden brown and crispy.

8. Serve the potato patties hot and enjoy!
