Bacon and Potato Pancake Delight
Ingredients
- 500g/2 cups all-purpose flour
- 4 large eggs
- 250ml/1 cup milk
- 500g/2 cups mashed potatoes
- 140g/1 cup diced bacon
- 6g/1 tsp salt
- 30g/2 tbsp chopped fresh dill
- 120g/1 cup fresh lingonberries for serving
Instructions
1. Preheat oven to 400°F (200°C).
2. Boil potatoes until tender then mash and set aside.
3. In a large bowl whisk together 2 cups (250ml) flour 2 eggs and 1/2 teaspoon salt.
4. Add 1 cup (250ml) milk whisking until smooth.
5. Stir in mashed potatoes 4 slices diced bacon and 1/4 cup (15g) chopped fresh dill.
6. Pour mixture into a greased oven-safe 9-inch (23cm) skillet or baking dish.
7. Bake for 25-30 minutes or until edges are golden and center is set.
8. Serve hot topped with fresh lingonberries and a side of your choice.
