Bacon and Potato Pie

Bacon and Potato Pie
This classic savory pie is a family favorite, especially on weekends or holidays. The combination of crispy bacon and tender potatoes makes it incredibly satisfying. The egg mixture ties everything together, creating a rich and hearty meal. It's perfect for sharing with loved ones or enjoying alone on a cozy evening. The warmth and comfort it brings to the table make it a go-to dish for many occasions.
Ingredients
  • 450g / 1 package of bacon, preferably smoked
  • 250g / 2 cups grated mature cheddar cheese
  • 300g / 10.6 oz cooked and cooled potatoes, diced
  • 475ml / 2 cups heavy cream
  • 1 package of pre-made pie crust, thawed
  • 2 eggs
  • Salt and coarse black pepper to taste
  • 6g / 2 cloves garlic, finely minced
  • 115g / 1 medium yellow onion, diced
  • 15g / 1 tablespoon unsalted butter for greasing
Instructions

1. Preheat your oven to 350°F or 175°C. Grease a pie dish with a generous amount of butter to prevent the crust from sticking.

2. Roll out the pre-made pie crust to fit the pie dish snugly, trimming any excess crust from the edges.

3. In a pan, melt butter over medium heat and sauté the diced onion until it becomes soft and translucent. Add the minced garlic and cook for another minute, stirring occasionally to prevent burning.

4. In a large bowl, combine the cooked and cooled potatoes, sautéed onion and garlic, grated cheese, eggs, and heavy cream. Mix everything together until the ingredients are well combined and the potatoes are evenly coated.

5. Add the diced bacon to the potato mixture and stir until the bacon is evenly distributed throughout the filling.

6. Pour the potato and bacon mixture into the prepared pie crust and bake in the preheated oven for about 40 minutes, or until the crust turns golden brown and the filling is set.

7. Remove the pie from the oven and let it cool for 10 minutes before serving. If desired, garnish with chopped parsley for a pop of color and fresh flavor.
