Bacon-Wrapped Chicken Breasts with Creamy Parmesan Sauce and Cherry Tomatoes
Ingredients
- 680 g (1.5 lbs) boneless skinless chicken breast halves (4 pieces)
- 140 g (5 oz) thick-cut bacon
- 3 g (1/2 tsp) kosher salt plus more to taste
- 5 g (1 tsp) crushed rose pepper
- 42 g (3 tbsp) unsalted butter
- 250 g (8.8 oz) cherry tomatoes mixed varieties
- 10 g (1/3 cup) fresh basil coarsely chopped
- 100 ml (3.4 fl oz) heavy cream
- 40 g (1.4 oz) grated Parmesan cheese
Instructions
1. Preheat oven to 400°F (200°C)
2. Season chicken with 2 g (1/4 tsp) salt and half the rose pepper
3. Wrap each chicken breast with 2 to 3 bacon slices securing with toothpicks
4. Melt 1 tbsp butter in oven-safe skillet over medium heat
5. Cook wrapped chicken 3 to 4 minutes per side until bacon crisps
6. Transfer skillet to oven bake 15 to 20 minutes until chicken reaches 165°F
7. Halve tomatoes toss with basil and remaining rose pepper
8. Melt 1 tbsp butter in saucepan over low heat
9. Add heavy cream bring to gentle simmer
10. Whisk in Parmesan until smooth and slightly thickened about 2 to 3 minutes
11. Season sauce with remaining salt if needed
12. Serve chicken topped with sauce and tomato basil mixture
