Bacon-Wrapped Meatloaf with Wedge Potatoes
- 600g / 1.3lb mixed ground meat
- 800g / 1.8lb potatoes (delicatessen or your choice)
- 120-140g / 4.3-5oz high-quality bacon
- 2 medium yellow onions finely chopped
- 2 dl / 0.8 cup heavy cream
- 1 egg
- ¾ dl / 0.3 cup all-purpose flour
- 2 krm / 1 tsp black pepper
- 1 tsp salt

1. Preheat your oven to 400°F (200°C).
2. Peel the potatoes and cut them into wedges.
3. Place them in a bowl and drizzle with olive oil.
4. Season with salt and pepper to taste.
5. In a separate bowl mix together 500g (1.1lb) ground meat 2 tablespoons all-purpose flour 60ml (2fl oz) heavy cream 1 chopped onion 1 teaspoon black pepper and 1 egg.
6. Divide the meat mixture into 4 equal portions.
7. Shape each portion into a loaf and wrap with 2-3 slices of bacon securing with a toothpick if needed.
8. Place the meatloaves on a baking sheet lined with parchment paper leaving some space between each loaf.
9. Place the potato wedges on the same baking sheet scattering them around the meatloaves.
10. Bake in the preheated oven for 35-40 minutes or until the meatloaves are cooked through and the potatoes are tender.
