Bacon Wrapped Pork Tenderloin with Parmesan and Herbs
This bacon-wrapped pork tenderloin is a real crowd-pleaser. The Parmesan and herbs add a nice touch without overpowering the meat. Ingredients
  • 700g (1.54 lbs) pork tenderloin
  • 100g (3.5 oz) 30% Parmesan cheese
  • 8 slices prosciutto or serrano ham
  • 4 servings sugar snap peas
  • 1/2 yellow onion (115g or 4 oz)
  • 20-25 cherry tomatoes (200-250g or 7-8.8 oz)
  • 20g (0.7 oz) fresh basil leaves
  • 20g (0.7 oz or 1.5 tbsp) butter or oil for greasing the pan
Instructions

1. Preheat your oven to 400°F (200°C)

2. Season the pork tenderloin with salt and pepper

3. Wrap the prosciutto slices around the pork slightly overlapping each other

4. Place the wrapped pork on a baking sheet lined with parchment paper seam side down

5. Drizzle with butter or oil and sprinkle the Parmesan cheese on top

6. Roast in the oven for 30 minutes

7. While the pork is cooking sauté the sliced yellow onion in a pan until caramelized

8. Remove the pork from the oven and let it rest for 5 minutes before slicing it thinly against the grain

9. Serve with the caramelized onions sugar snap peas fresh basil leaves and cherry tomatoes
