Baked Cod with Lemon and Shrimp Sauce
Ingredients
- 600 g (1.3 lbs) fresh cod fillet
- 450 g (1 lb) shrimp, peeled and deveined
- 500 ml (2 cups) crème fraîche
- 200 ml (3/4 cup + 2 tbsp) water
- 1/2 cup (50 g) Parmesan cheese, finely grated
- 2 lemons, zest and juice
- 1 fish bouillon cube
- 1/4 bunch of fresh chives, finely chopped
- Salt and black pepper to taste
Instructions
1. Preheat your oven to 200°C (400°F).
2. In a large bowl, combine crème fraîche, water, and fish bouillon cube until smooth.
3. Add grated lemon zest, lemon juice, salt, and pepper. Stir until fully mixed.
4. Place cod fillets in a baking dish and pour the sauce over them, ensuring each piece is well coated.
5. Sprinkle grated Parmesan cheese evenly over the top of the cod.
6. Arrange shrimp around the cod, leaving a small gap around the edges.
7. Bake for 20-25 minutes or until cod is opaque and shrimp have turned pink.
8. Remove dish from oven and top with chopped chives.
9. Serve immediately while hot.
