Baked Falu Sausage with Sweet Potatoes and Mustard Cream

- 1 lb 2.6 oz (550g) Falu Sausage
- 1.5 cups (360 ml) crème fraiche
- 5.3 oz (150g) grated aged cheese (31%)
- 5.3 oz (150g) fresh cheese with garlic and herb flavor
- 0.5 cups (120 ml) coarse and sweet mustard
- 2 tbsp (30 ml) coarse mustard
- To taste, salt
- To taste, black pepper
1. Preheat your oven to 375°F or 190°C.
2. Peel the sweet potatoes and cut them into large wedges, then place them on a baking sheet. Drizzle with oil and season with salt and pepper.
3. Bake the sweet potatoes for 30-40 minutes, or until they are tender.
4. While the sweet potatoes are baking, slice the Swedish sausage (Falu Sausage or similar) into thick rounds. Place them on a separate baking sheet and bake for 20-25 minutes, or until cooked through.
5. To make the mustard cream, combine 1 cup (250 ml) of crème fraiche, 2 tablespoons (30g) of coarse mustard, salt, and pepper in a bowl. Mix well and refrigerate until ready to serve.
6. To assemble the dish, place the baked sweet potatoes on a plate. Top with a few slices of the sausage, then spoon the chilled mustard cream over the top.
7. Serve warm and enjoy!
