Baked Fish Casserole with Spicy Red Pepper Relish

Ingredients
- 450g / 1 pound Cod fillet
- 250ml / 1 cup Heavy Cream
- 125ml / 1/2 cup Sour Cream
- 115g / 1 medium Yellow Onion
- 120g / 4 ounces Roasted Red Peppers (from a jar), about 2 peppers
- 125ml / 1/2 cup Red Pepper Sauce (such as sweet chili sauce)
- 30g / 2 tablespoons Fresh Parsley, chopped, for garnish
- Salt and Pepper, to taste
Instructions
1. Preheat your oven to 190°C or 375°F.
2. In a large mixing bowl, combine 1 cod fillet, 250ml or 1 cup of heavy cream, 125ml or half a cup of sour cream, 1 medium yellow onion finely chopped, a pinch of salt, and a few grinds of pepper.
3. Mix the ingredients together until they're well combined and the onion is evenly distributed.
4. Transfer the mixture to a baking dish, then sprinkle chopped parsley over the top.
5. Bake the casserole in the preheated oven for 25-30 minutes, or until the top is golden brown and the fish is cooked through.
6. While the casserole is baking, mix together some roasted red peppers and red pepper sauce in a bowl.
7. Once the fish casserole is done, serve it hot topped with the spicy red pepper relish.
