Baked Mont d'Or Cheese with Savory Accompaniments
- 499 g (1.1 lb) Mont d’Or cheese, preferably Vacherin Mont d’Or, 31% fat
- 118 ml (0.5 cup) dry white wine
- 2 cloves garlic, peeled and minced
- crusty bread, sliced, for serving
- fresh grapes, for serving
- figs, for serving
- assorted nuts, for serving
- crackers, for serving
1. Preheat oven to 200°C (400°F).
2. Place the Mont d’Or cheese in its original wooden box. Wrap the base and sides of the box tightly in aluminum foil to prevent leakage during baking.
3. Using a sharp knife, score the top rind in a crosshatch pattern and make shallow cuts around the inner edge down to the wood.
4. Press the minced garlic evenly into the scored slits.
5. Pour the white wine over the top, allowing it to seep into the cuts.
6. Place the cheese in the oven and bake for 20 to 30 minutes, or until the center is fully melted and bubbling gently. If the cheese is at room temperature, reduce baking time to 15 to 20 minutes.
7. Remove from the oven, carefully take off any top rind if desired, and serve immediately while hot.
8. Serve with sliced crusty bread, fresh grapes, figs, nuts, and crackers for dipping and spreading.
