Baked Pasta with Ham Spinach and Scallions

- 375ml (1 3/8 cups) mayonnaise
- 250g (8.8 oz) uncooked pasta
- 300g (10.6 oz) diced ham
- 200ml (3/4 cup) crème fraiche
- 150g (5.3 oz) shredded flavorful cheese (31% fat)
- 60g (2.1 oz) baby spinach
- 2 scallions
- 15ml (1 tbsp) chili sauce
- 5ml (1 tsp) ground nutmeg
1. Preheat your oven to 425°F or 220°C. While waiting for it to heat up, cook the pasta al dente according to the package instructions. Once it's done, transfer the pasta to a baking dish.
2. Slice the scallions thinly and chop the spinach, making sure to reserve some of the leaves for garnish later. Sprinkle the scallions and spinach evenly over the pasta in the baking dish.
3. Dice the ham into small pieces and lightly brown it in a dry skillet over medium heat. This will add a nice texture and flavor to the dish.
4. In a separate bowl, whisk together 1 cup or 240ml of crème fraiche, 2 tablespoons or 30g of mayonnaise, 1 tablespoon or 15g of chili sauce, and a pinch of nutmeg. Once the mixture is smooth, add the browned ham and mix well to combine.
5. Pour the ham and sauce mixture over the pasta in the baking dish, making sure to cover everything evenly. Sprinkle shredded cheese on top, about 1 cup or 115g should do the trick.
6. Bake the dish in the preheated oven for about 15 minutes, or until the top is golden brown. You may need to adjust the baking time slightly depending on your oven.
7. Finally, garnish the dish with the reserved spinach leaves and serve hot.
