Indulge in a satisfying and nutritious meal with these baked potatoes loaded with a creamy mixture of tuna and avocado. This dish offers a delightful combination of flavors and textures, perfect for a cozy night in or a casual dinner party.
Ingredients
  • 4 baking potatoes
  • 2 avocados, diced
  • 2 tbsp (30 ml) lemon juice
  • 1 small red onion, chopped
  • 4 tbsp (60 ml) chopped fresh dill
  • 1 tsp (5 ml) chili flakes
  • 1 1/2 cups (360 ml) crème fraiche
  • 2 cans (150 g each) tuna in water, drained and flaked
  • Salt and freshly ground black pepper to taste
  • 3 hard-boiled eggs, sliced
Instructions

1. Preheat the oven to 400°F (200°C).

2. Wash and dry the potatoes thoroughly. Poke several holes in each potato using a fork to allow steam to escape during baking.

3. Lightly rub the potatoes with oil and sprinkle with salt. Place them directly on the middle oven rack.

4. Bake for 45 to 60 minutes or until the potatoes are tender when pierced with a fork.

5. While the potatoes are baking, prepare the tuna and avocado mixture. In a mixing bowl, combine the drained and flaked tuna, diced avocado, lemon juice, chopped red onion, dill, chili flakes, and a pinch of salt and pepper. Mix until well combined.

6. Once the potatoes are done, remove them from the oven and let them cool for 5 minutes. Slice each potato in half lengthwise.

7. Spoon the tuna and avocado mixture evenly over each potato half. Add a dollop of crème fraiche on top of each.
