Baked Salmon Sides with Creamy Dill Sauce

Ingredients
- 450g / 1 lb fresh salmon fillet, skin removed
- 475ml / 2 cups crème fraiche (or sour cream)
- 85g / 3 oz fish roe paste (or red caviar substitute)
- 60g / 1/4 cup fresh dill, chopped
- 115g / 1/2 cucumber, sliced
- Salt and black pepper to taste
Instructions
1. Preheat your oven to 200°C / 400°F.
2. Line a baking sheet with aluminum foil or parchment paper and place the salmon fillet in the center.
3. Drizzle the crème fraiche over the salmon making sure to cover the entire surface.
4. Sprinkle the chopped dill and sliced cucumber over the crème fraiche.
5. Dot the top of the salmon with the fish roe paste if using.
6. Season with salt and black pepper to taste.
7. Bake the salmon in the preheated oven for 12-15 minutes or until cooked through.
8. Remove the salmon from the oven and let it rest for a few minutes before slicing it into individual portions.
9. Serve the baked salmon hot garnished with additional fresh dill if desired.
