Baked Salmon with Potatoes Leeks and Green Peas

- 750g / 1.75 lbs Salmon fillet
- 400g / 4 large potatoes, peeled and cubed
- 250g / 2 large leeks, chopped (reserve 10cm / 4 inches for garnish)
- 120g / 1 cup fresh green peas
- 30ml / 2 tbsp olive oil
- 10g / 2 tsp honey
- 6g / 1 tsp salt
- 3g / 1/2 tsp black pepper
- 3g / 2 tsp red pepper flakes
- Citron slices for garnish
1. Preheat your oven to 400°F (200°C).
2. Line a baking sheet with parchment paper.
3. In a bowl, combine 2 tablespoons of olive oil, 1 tablespoon of honey, 1/2 teaspoon of salt, 1/4 teaspoon of black pepper, and 1/4 teaspoon of red pepper flakes.
4. Add a 6-ounce (170g) salmon fillet to the bowl and coat it evenly with the olive oil mixture.
5. Place the salmon on the prepared baking sheet and bake for 12-15 minutes or until it is cooked through.
6. While the salmon is baking, heat 1 tablespoon of olive oil in a large skillet over medium heat.
7. Add 2 medium chopped leeks to the skillet and cook until they are softened, about 5 minutes.
8. In a separate pot, boil 2 cups of cubed potatoes in salted water until they are tender, about 10-12 minutes.
9. Drain the potatoes and set them aside.
10. In a small bowl, mix together 1 cup of cooked green peas and a pinch of salt.
11. To serve, place a piece of salmon on each plate, accompanied by a scoop of roasted potatoes, sautéed leeks, and a sprinkle of green peas.
12. Garnish with reserved leek strips and a slice of citron, also known as a type of citrus fruit similar to a lemon.
