Baked Shrimp with Garlic Butter
I love this baked shrimp dish. It's got a great garlic butter flavor and a nice crunch from the breadcrumbs. It's perfect for a special night in or a dinner party with friends.
Ingredients
  • 1 1/2 cups (190g or 300g with shells) large peeled and deveined shrimp
  • 2 cups panko breadcrumbs
  • 1/2 cup (115g or 1 stick) unsalted butter, softened
  • 1/2 cup (120ml) mayonnaise
  • 1/4 cup (30g) chopped fresh parsley
  • 4 cloves garlic, minced
  • 2 tbsp freshly squeezed lemon juice
  • 2 tbsp dry white wine (optional)
  • 1 tsp salt
  • 1/2 tsp freshly ground black pepper
Instructions

1. Preheat your oven to 400°F or 200°C

2. Take a medium bowl and stir the panko breadcrumbs, softened butter, mayonnaise, garlic, salt and pepper until everything blends well

3. Place the shrimp in a baking dish in a single layer with some room between each one

4. Evenly divide the breadcrumb mix and spoon it on top of each shrimp

5. Scatter chopped parsley over the shrimp and squeeze some lemon juice on top

6. If you like white wine then pour a little over the shrimp before baking

7. Put the dish in the oven and bake for 12 to 15 minutes until the shrimp turn pink and are fully cooked

8. Take the shrimp out of the oven and serve them right away with more parsley if you want
