Baked Sweet Chili Cod with Creamy Sauce
Pan-seared to perfection and finished in the oven this sweet chili cod is a masterclass in balance and restraint. The delicate fish is elevated by a sticky sweet chili sauce and a squeeze of fresh citrus. A dish that's equal parts comforting and refined it's sure to become a staple in your kitchen.
Ingredients
  • 1.32 lbs / 600g cod fillet
  • 1.69 cups / 400ml crème fraiche
  • 1.69 cups / 400ml heavy cream
  • 1.69 cups / 400ml sweet chili sauce
  • 2 medium carrots
  • ½ cup / 15g chopped parsley
  • 1 vegetable broth cube
  • ½ lemon
  • Salt and pepper
Instructions

1. Preheat the oven to 392°F (200°C).

2. Place the cod pieces in a baking dish and season with salt and pepper.

3. In a separate bowl mix together 1/2 cup (120ml) crème fraiche 1/4 cup (60ml) heavy cream 1 tablespoon chopped parsley 1 vegetable broth cube 2 tablespoons sweet chili sauce and 1 tablespoon lemon juice.

4. Peel and grate 2 medium carrots then add them to the sauce mixture.

5. Pour the sauce over the cod and bake in the preheated oven for approximately 30 minutes or until the fish is cooked through.

6. Serve with rice or mashed potatoes.
