Bean Bread

Ingredients
- 400g / 10.6oz (drained weight) Large White Beans, also known as Cannellini
- 2 large Eggs
- 2 1/4 teaspoons Baking Powder
- 1/2 teaspoon Salt
- 30ml / 2 tablespoons Whole Wheat Flour
- 15ml / 0.5 tablespoon freshly squeezed Lemon Juice
Instructions
1. Combine all the ingredients in a large mixing bowl and mix until a sticky, smooth dough forms. Let it rest for 10 minutes to allow the ingredients to meld together.
2. Preheat your oven to 200°C (392°F), using both upper and lower heat settings.
3. Wet your hands and shape the dough into 6 equal-sized round balls. If desired, create a hole in the middle for a bagel-like shape. Wet your hands between each new ball to prevent sticking. Place the balls onto a baking sheet lined with parchment paper and top with your desired toppings, if using.
4. Bake in the middle of the oven until the breads are golden brown, which should take 20-25 minutes. Keep an eye on them as oven temperatures may vary.
