Blueberry Oatmeal Snibbles

- 2 1/4 cups (285g) all-purpose flour
- 1 cup (200g) granulated sugar
- 1/2 cup (115g) cold butter, cut into small pieces, at 43°C (110°F)
- 1 1/2 teaspoons baking powder
- 1 large egg
- 1/4 cup (25g) rolled oats
- 1/2 teaspoon vanilla sugar
1. Preheat your oven to 350°F or 175°C. Grab a baking sheet and line it with parchment paper
2. Take a big bowl and mix the flour sugar and baking powder using a whisk
3. Throw in the cold butter and use your fingers or a pastry blender to rub it into the dry stuff until it looks like rough crumbs
4. In another bowl whisk the egg lightly then stir in the rolled oats granulated sugar and vanilla sugar until everything is blended
5. Pour the egg mix into the flour mix and stir until a dough comes together
6. Scoop out bits of dough about a tablespoon each and place them on the baking sheet with space left between each one for spreading
7. Bake for 12 to 15 minutes until the outsides turn a light golden color
8. Take the baking sheet out of the oven and let the cookies sit for 5 minutes to firm up then move them to a wire rack to finish cooling
