Ingredients
  • 800g / 1 3/4 cups broccoli florets
  • 150g / 6 ounces grated cheese (31% fat)
  • 140g / 1 package of bacon, preferably smoked, + 1 package for garnish
  • 50/50 / 2 1/4 cups heavy cream
  • 4 tablespoons / 60g all-purpose flour
  • 2 egg yolks
  • 2 tablespoons butter
  • Salt and white pepper
Instructions

1. Preheat the oven to 375°F (190°C).

2. In a large pan cook the bacon over medium heat until crispy then drain on paper towels.

3. In the same pan add the butter and sauté the broccoli until tender about 5 minutes. Season with salt and white pepper.

4. In a separate bowl whisk together the egg yolks and heavy cream. Add the grated cheese and whisk until smooth.

5. In a greased 23x33 cm (9x13 inch) baking dish arrange half of the broccoli mixture. Pour half of the cream mixture over the broccoli. Repeat the layers.

6. Top the gratin with the crispy bacon and bake for 30-35 minutes or until the top is golden brown and the gratin is set.
