Candied Pears with Ginger and Lemon

Ingredients
- 1 kilogram (2.2 pounds) small firm pears (about 6 to 8)
- 400 grams (2 cups) granulated sugar
- 480 milliliters (2 cups) water
- 1 organic lemon peeled and thinly sliced (seeds and white pith removed)
- 50 grams (about 1/4 cup) fresh ginger peeled and thinly sliced
Instructions
1. Peel pears leaving stems intact and trim blemishes
2. Combine water sugar lemon slices and ginger in large pot
3. Bring to boil over medium-high heat stirring to dissolve sugar
4. Reduce heat to low and simmer 10 minutes
5. Add pears and simmer gently 20 to 30 minutes until fork-tender but holding shape
6. Remove from heat and cool pears in syrup 1 hour
7. Transfer pears and syrup to clean jars
8. Seal and refrigerate up to 2 weeks
9. Serve warm with vanilla ice cream
