- 3 eggs
- 1 1/2 cups (300g) granulated sugar
- 3/4 cup (100g) potato flour
- 2 tablespoons (15g) cocoa powder
- 1 teaspoon (5g) baking powder
- 1 teaspoon (5g) vanilla sugar
- 2 cups (250g) confectioner's sugar
- 150g unsalted butter, softened
- 1 large egg yolk
- 1 double shot of espresso (doppio)
- 50g roasted salted almonds
1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper
2. In a medium bowl, whisk together the potato flour, cocoa powder, and baking powder, then set aside
3. In a large bowl, whisk the granulated sugar and eggs until light and fluffy before adding the softened butter and mixing until fully combined
4. Gently fold the flour mixture into the egg mixture until just combined
5. Using a spoon or cookie scoop, place small balls of dough onto the prepared baking sheet, spacing them about 1 inch (2.5 cm) apart
