Celebratory Meat Pie for a Crowd

- 450ml / 1 1/2 cups heavy cream
- 6 eggs
- 240ml / 1 cup crème fraiche
- 60ml / 1/4 cup cold water
- 250g / 2 cups all-purpose flour
- 375g ground meat (beef, pork, or a combination)
- 170g / 1 1/2 sticks unsalted butter, softened
1. Preheat your oven to 375°F or 190°C.
2. Combine flour and cold water in a large mixing bowl. Add softened butter gradually, mixing until the dough forms. Wrap it in plastic wrap and chill in the refrigerator for 30 minutes.
3. Roll out the chilled dough to a thickness of about 1/8 inch or 3 mm. Transfer the dough to a 9-inch or 23 cm pie dish, trimming the edges to fit.
4. Whisk eggs, heavy cream, and crème fraiche (a type of rich sour cream) in a separate bowl. Add the ground meat and mix until well combined.
5. Pour the meat mixture into the pie crust, spreading it evenly. Fold the edges of the crust over the filling to create a decorative border.
6. Bake the pie for 35-40 minutes, or until the crust turns golden brown and the filling is cooked through.
