Cheesy Ham Pancake Roll Ups

- 4 large eggs
- 1 1/2 cups (360ml) milk
- 3 1/2 sticks (1/2 cup or 115g) unsalted butter, melted
- 2 3/4 cups (310g) all-purpose flour
- 1 1/2 cups (190g) aged grated cheese (preferably Parmesan)
- Several sprigs of fresh basil leaves
- A few clusters of fresh cherry tomatoes, still on the vine
1. Preheat your oven to 375°F or 190°C.
2. Whisk together milk, eggs, and melted butter in a large bowl until well combined.
3. Gradually add flour to the wet ingredients and whisk until the mixture is smooth.
4. Heat a non-stick pan over medium heat then use a ladle to pour a small amount of batter into the pan, tilting to evenly coat the base.
5. Cook the pancake for 2-3 minutes, or until it starts to bubble and the edges begin to curl, then loosen it with a spatula and flip.
6. Place a slice of ham on one half of the pancake followed by a sprinkle of grated cheese, then fold the other half over to enclose.
7. Place the roll-ups on a baking sheet lined with parchment paper and bake for 10-12 minutes, or until the cheese is melted and the pancakes are crispy.
8. Serve the roll-ups warm, garnished with cherry tomatoes and fresh basil leaves.
