Cheesy Kassler Casserole with Mozzarella and Ajvar

- 12.7 fl oz (375ml) heavy cream
- 4.4 oz (125g) mozzarella cheese
- 10.6 oz (300g) boneless pork shoulder
- 1 1/2 cups (190g) uncooked white rice
- 1/2 cup (120ml) roasted red pepper sauce (Ajvar)
- 1 1/2 tbsp (22g) chopped cocktail capers
- 1 sprig cherry tomatoes
1. Preheat your oven to 375°F or 190°C.
2. In a large mixing bowl, whisk together the chopped cocktail capers, heavy cream, and a pinch of salt until smooth.
3. Add the grated mozzarella cheese to the cream mixture and stir until well combined.
4. Cut the smoked pork loin, also known as kassler, into bite-sized pieces and place them in a greased casserole dish.
5. Pour the cream and cheese mixture over the smoked pork, making sure to cover it evenly.
6. Sprinkle a few sprigs of cherry tomatoes on top for added flavor.
7. Drizzle the roasted red pepper sauce, also known as ajvar, over the casserole, spreading it evenly with a spoon.
8. Bake in the preheated oven for approximately 35-40 minutes or until the top is golden brown and the casserole is hot and bubbly.
9. Serve with a side of steaming hot rice and enjoy!
