Cheesy Oat Bread with Sesame Seeds and Aged Cheddar
- 5 large eggs
- 2 3/4 cups (315g) rolled oats
- 1 1/4 cups (160g) grated aged cheddar cheese
- 1 cup (225g) cottage cheese or quark
- 2 teaspoons baking powder
- 1 teaspoon salt
- 2 tablespoons black and white sesame seeds
1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
2. In a large bowl, combine the oats, aged cheddar cheese, baking powder, and salt.
3. In another bowl, beat the eggs, then stir in the sesame seeds until evenly mixed.
4. Pour the egg mixture into the dry ingredients and stir until a dough comes together.
5. Fold in the cottage cheese or quark until well incorporated.
6. Turn the dough onto a floured surface and knead for about 5 minutes, until smooth and elastic.
7. Divide the dough into 8 to 10 equal portions.
8. Roll each portion into a ball, then flatten slightly into a round disk.
9. Arrange the disks on the baking sheet, leaving about 1 inch (2.5 cm) between each.
10. Bake for 20 to 25 minutes, until the bread is golden brown and firm when touched.
11. Allow the bread to cool on a wire rack before slicing and serving.
