Cheesy Potato Muffins with Crayfish

Ingredients
- 500g / 1 lb Mashed Potatoes
- 150g / 5 oz Grated Cheddar Cheese
- 2 Large Eggs
- 2 tbsp / 30g Unsalted Butter, melted
- 1/4 cup / 60g Crème Fraiche
- 1/4 cup / 60g Crayfish, peeled and chopped
- Salt and Pepper, to taste
- Fresh Thyme, chopped (optional)
Instructions
1. Preheat your oven to 400°F or 200°C. Line a muffin tin with paper liners to make removal easy.
2. In a large bowl, combine mashed potato, grated cheese, melted butter, eggs, salt, and pepper. Mix all these ingredients until you get a smooth consistency.
3. Divide the potato mixture evenly among the muffin cups to get uniform portions. Bake for 20 minutes, or until they turn golden brown. Allow them to cool slightly.
4. Top each muffin with a spoonful of sour cream, followed by chopped crayfish and a sprinkle of fresh thyme if desired. You can serve them warm or chilled, whichever you prefer.
