Cheesy Sausage Bake with Broccoli and Cheese Sauce

- 500g / 1.1lb sausage
- 250g / 8.8oz pasta of your choice
- 250g / 8.8oz broccoli
- 2 tablespoons / 30g butter
- 2 medium onions (approximately 250g / 8.8oz)
- 10 cherry tomatoes (approximately 120g / 4.3oz)
- Fresh herbs for garnish (to taste)
1. Preheat your oven to 350°F (180°C).
2. Cook the pasta according to the package instructions until it reaches an al dente texture then set it aside.
3. In a large skillet melt the butter over medium heat and add the onion. Cook the onion until softened which should take about 5 minutes.
4. Next add the broccoli to the skillet and cook until tender which should also take about 5 minutes.
5. While the vegetables are cooking slice the sausage into thick rounds.
6. In a large mixing bowl combine the cooked pasta sausage slices and cherry tomatoes.
7. Now in a separate saucepan create a cheese sauce by melting butter then whisking in flour to make a roux. Gradually add milk whisking continuously until the sauce thickens. Remove the saucepan from heat and stir in grated cheese until melted and smooth.
8. Combine the pasta mixture and cheese sauce in a large baking dish.
9. Top the dish with additional grated cheese and bake in the preheated oven for 25-30 minutes or until the top is golden brown and the casserole is hot and bubbly.
10. Remove the dish from the oven and let cool for a few minutes before serving. Garnish with fresh herbs.
