Cheesy Swedish Meatballs on a Bed of Sautéed Vegetables

Cheesy Swedish Meatballs on a Bed of Sautéed Vegetables
On cold nights, nothing warms the soul like tender meatballs nestled over a bed of golden caramelized onions and sweet apple slices, all smothered in a creamy, peppery cheese sauce. This hearty, rustic dish comes together quickly and delivers big flavor with minimal effort—my family’s go-to comfort dinner when the wind howls outside.
Ingredients
  • 800 grams (1.76 pounds) Bologna sausage, sliced into 15 rounds
  • 200 grams (7 ounces) cream cheese, peppercorn flavored
  • 1 large yellow onion, thinly sliced
  • 1 medium apple, thinly sliced
  • 120 milliliters (1/2 cup) water
  • Salt, to taste
  • Freshly ground black pepper, to taste
Instructions

1. Heat a skillet over medium heat and add the sliced onion.

2. Sauté for 6 to 8 minutes, stirring occasionally, until soft and golden.

3. Add the sliced apple to the pan and cook for another 3 to 4 minutes until softened and slightly caramelized.

4. Remove from heat and set aside.

5. In a bowl, whisk cream cheese with water until smooth and pourable.

6. Season the mixture with salt and pepper to taste.

7. Season the bologna slices lightly with pepper.

8. Arrange the sautéed onion and apple mixture on a serving platter.

9. Lay the bologna slices over the vegetables.

10. Pour the warm cheese sauce evenly over the top, coating each piece.

11. Serve immediately while warm.
