Chicken Breast in Rich Balsamic Glaze
Pan-seared chicken breast takes center stage in this harmonious balance of flavors. A rich balsamic glaze adds a tangy depth to the dish while a side of fluffy basmati rice provides a subtle creaminess. Steamed edamame beans bring a burst of freshness to each bite. This simple yet satisfying meal is perfect for a weeknight dinner or a casual gathering with friends.
Ingredients
  • 4 chicken breast fillets
  • 150g (5.3 oz) edamame beans frozen
  • 4 servings of basmati rice
  • 140g (4.9 oz) package of bacon
  • 3 tablespoons (45ml) heavy cream
  • 3 tablespoons (45ml) balsamic vinegar
  • 10 cherry tomatoes halved
  • 2 cloves of garlic minced
  • 2 tablespoons (30ml) chicken broth
  • 1 tablespoon (15g) butter
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
Instructions

1. Preheat your oven to 400°F (200°C).

2. Cook the bacon in a large skillet over medium heat until crispy then remove it from the skillet and set aside.

3. Add butter to the same skillet and sauté the cherry tomatoes until tender then add the garlic and cook for 1 minute.

4. Whisk together heavy cream, balsamic vinegar, and chicken broth in a separate bowl then add dried oregano and season with salt and pepper to taste.

5. Place chicken breast fillets in the skillet and spoon the balsamic glaze over the top of each fillet.

6. Transfer the skillet to the preheated oven and bake for 20-25 minutes or until the chicken is cooked through at an internal temperature of 165°F (74°C).

7. Serve the chicken with a side of basmati rice and edamame beans.
