Chocolate Ball Trays

- 250ml (1 cup) strong cold coffee, chilled to 4°C (40°F)
- 625g (2 1/2 cups) unsweetened cocoa powder
- 200g (7 oz) milk chocolate
- 6g (1 teaspoon) flaky salt
- 285g (1 1/4 cups) granulated sugar
- 315g (2 1/2 cups) oat flour
- 6g (1 teaspoon) salt
- 140g (5 oz) unsalted butter, softened to room temperature
- 120ml (1/2 cup) heavy cream
- 7g (1 1/2 teaspoons) vanilla sugar
1. Preheat your oven to 350°F or 180°C.
2. Whisk together oat flour, cocoa powder, and granulated sugar in a large mixing bowl.
3. Add cold coffee, flaky salt, and salt to the dry ingredients and mix until well combined.
4. Melt milk chocolate in a double boiler or in the microwave, heating in 30-second increments and stirring between each interval until smooth.
5. Combine heavy cream, vanilla sugar, and melted chocolate with the dry ingredients and mix until a dough forms.
6. Add unsalted butter to the dough and mix until well combined.
7. Press the dough into a long pan lined with parchment paper.
8. Bake for 20-25 minutes, or until the edges are set and the center is slightly soft.
9. Remove from the oven and let cool completely in the pan.
10. Cut into bars and serve.
