Cinnamon Swirl Buns with Pearl Sugar
I just love these sweet morning treats. Soft buns filled with a gooey cinnamon swirl and topped with a crunchy sugar crust - it's the perfect way to start the day. They're easy to grab on the go, making them a great breakfast or snack for busy mornings. The combination of sweet and spicy is absolute perfection, and the texture of the crunchy sugar on top adds a delightful surprise. These sweet buns are sure to become a new favorite in your household.
Ingredients
  • 375g / 13.2 oz unsalted butter, softened
  • 450g / 2 3/4 cups all-purpose flour
  • 375ml / 1 1/2 cups granulated sugar
  • 120ml / 1/2 cup milk (3%)
  • 4 tsp / 20g baking powder
  • 1 large egg
  • zest of 1 lemon
  • granulated sugar for dusting (to taste)
  • pearl sugar for garnish (to taste)
Instructions

1. Preheat the oven to 190°C or 375°F. Line a baking sheet with parchment paper.

2. In a large mixing bowl, combine 250g or 2 1/4 cups of flour, 100g or 1/2 cup of sugar, and 6g or 1 teaspoon of baking powder.

3. Add 115g or 1/2 cup of softened butter to the bowl and mix until the dough comes together.

4. In a separate bowl, whisk together 120ml or 1/2 cup of milk and one large egg. Add this mixture to the dough and mix until smooth.

5. Knead the dough for five minutes until it becomes elastic and smooth.

6. Roll out the dough into a rectangle, about 6mm or 1/4 inch thick.

7. Mix the lemon zest with a little sugar and sprinkle evenly over the dough, leaving a 2.5cm or 1-inch border on one side.

8. Roll the dough into a tight log, starting from the opposite side of the border.

9. Cut the log into twenty-five equal pieces and shape each into a ball.

10. Place the balls onto the prepared baking sheet, leaving about 2.5cm or 1 inch of space between each bun.

11. Bake for fifteen to twenty minutes, or until the buns are golden brown.

12. While still warm, brush the tops with a little melted butter and sprinkle with pearl sugar.
