Citrus and Coconut Layer Cake
Ingredients
- 2 cups warm water
- 6 eggs
- 1 cup coconut flakes for garnish
- 2 tsp baking powder
- 6 cups granulated sugar
- Zest of 1 lemon
- 7 cups all-purpose flour
Instructions
1. Preheat the oven to 350°F (180°C).
2. Grease a 9x13-inch rectangular baking dish.
3. In a large mixing bowl whisk together the warm water and baking powder. Add the flour and sugar mix until well combined.
4. Add the lemon zest mix until the dough is smooth and even.
5. Beat in the eggs until fully incorporated.
6. Divide the dough evenly into 3-4 portions depending on how thick you like your layers.
7. Pour each portion into the prepared baking dish smooth out the top.
8. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
9. Allow the cakes to cool completely before assembling and garnishing with coconut flakes.
