Citrus and Red Caviar Parmesan Fritters
This recipe is special. My aunt's recipe. Colds nights are great for these crispiy fritters made with lemon juice and parmesan, it just brings such liveliness to the table. Growing up, the combination of crispy batter paired with zesty lemon and rich caviar set the stage for many memorable gatherings. I've updated it recently by adding a good splash of lime juice for a more balanced flavor. The best is making them for a night out because it's really easy and decorated with red caviar, it looks very classy.
Ingredients
  • 120g / 4.3 oz Parmesan cheese, coarsely grated
  • 80g / 2.8 oz red caviar
  • Zest of 1 lemon
  • Black pepper, to taste
Instructions

1. Preheat your oven to 375°F or 190°C.

2. Line a baking sheet with parchment paper to prevent the fritters from sticking.

3. In a bowl, combine Parmesan cheese, black pepper, and lemon zest, then mix until well combined.

4. Using a spoon, shape the Parmesan mixture into small balls, about 1 1/2 inches or 3.8 cm in diameter.

5. Place them on the prepared baking sheet, leaving about 1 inch or 2.5 cm of space between each fritter.

6. Bake the fritters in the preheated oven for 15-20 minutes, or until they are golden brown and crispy.

7. Remove the fritters from the oven and let them cool for a short time.

8. Finish each fritter with a small dollop of red caviar on top, then serve warm.
