A moist spiced apple cake topped with a buttery oat crumble. Perfect warm with ice cream or alongside coffee, this simple dessert serves 8 to 10 from a single 9-inch pan.
Ingredients
  • 340 g (2 3/4 cups) all-purpose flour
  • 170 g (3/4 cup) unsalted butter softened
  • 200 g (1 cup) granulated sugar
  • 110 g (1/2 cup) packed light brown sugar
  • 3 large eggs
  • 500 g (about 2 to 3 medium) apples peeled and grated
  • 10 ml (2 teaspoons) vanilla sugar
  • 2.5 ml (1/2 teaspoon) ground cinnamon
  • 20 g (1/4 cup) rolled oats
  • 55 g (1/4 cup) packed light brown sugar
  • 2.5 ml (1/2 teaspoon) ground cinnamon
  • 1.25 ml (1/4 teaspoon) ground nutmeg
Instructions

1. Preheat oven to 350°F (175°C)

2. Grease a 9-inch (23 cm) springform pan

3. In a large bowl mix grated apples granulated sugar brown sugar and eggs until smooth

4. Stir in flour vanilla sugar and cinnamon just until combined

5. Pour batter into prepared pan

6. In another bowl mix rolled oats brown sugar cinnamon and nutmeg

7. Cut in butter until mixture is crumbly

8. Sprinkle crumble topping evenly over batter

9. Bake for 40 minutes or until a toothpick inserted in the center comes out clean

10. Cool cake in pan on a wire rack for 2 hours before serving
