Classic Bruschetta with Fresh Mozzarella

Ingredients
- 8 fl oz / 230ml olive oil at room temperature, 77°F/25°C is ideal
- 1 large red onion sliced into thin rings
- 2 slices of toasted or grilled bread
- Mozzarella cheese, 5.3 oz / 150g, preferably in one large ball
- 2 cups / 250g diced fresh tomatoes
- 1 cup / 20g chopped fresh basil leaves
- 3.5 oz / 100g garlic, about 2-3 cloves minced
- Salt and black pepper according to personal taste
Instructions
1. Preheat your oven to 350°F or 175°C.
2. Mix the minced garlic and olive oil in a small bowl until they're well combined.
3. Brush the garlic-infused oil evenly onto toasted bread slices.
4. In another bowl, combine the chopped basil, salt, and black pepper.
5. Slice the mozzarella cheese into thin rounds.
6. Arrange the tomato slices on top of the bread, leaving a small border around the edges.
7. Place a mozzarella round on top of the tomatoes.
8. Sprinkle the basil mixture evenly over the mozzarella cheese.
9. Serve immediately and enjoy!
