Classic Paprika Pizza Salad

- 1 head of cauliflower, approximately 450 grams or 1 pound
- 1 liter or 4.25 cups of water
- 120 milliliters or 1/2 cup of olive oil
- 2 tablespoons of white wine vinegar
- 1 teaspoon of dried oregano or Italian seasoning
- 1 teaspoon of salt
- 1/2 teaspoon of coarse black pepper
- 1 red bell pepper
1. Preheat the oven to 425°F or 220°C.
2. Rinse the cauliflower under cold water, then remove its leaves and stem.
3. Cut the cauliflower into florets and process them in a food processor until they resemble rice.
4. In a large bowl, whisk together 2-3 tablespoons of olive oil, 1 teaspoon of paprika, and a pinch of salt and pepper.
5. Add the cauliflower rice to the bowl and toss it to coat the cauliflower evenly with the oil mixture.
6. Spread the cauliflower mixture out on a baking sheet and roast it in the oven for 20-25 minutes, or until it's tender and lightly browned.
7. Take the roasted cauliflower and add it to a blender or food processor along with 1 chopped bell pepper, 1 teaspoon of dried oregano, and 1 tablespoon of vinegar.
8. Blend the mixture until it's smooth and creamy.
9. Serve it as a side dish, or use it as a topping for your favorite pizza.
