Classic Shrimp Sandwiches

- 1 kilogram / 2.2 pounds peeled and deveined shrimp
- 180 milliliters / ¾ cup mayonnaise
- 10 slices French bread
- ½ cucumber
- fresh dill
- lettuce leaves
1. Prepare the shrimp by peeling and deveining them.
2. Spread a generous amount of mayonnaise on each slice of French bread, about 2-3 tablespoons (30-45 ml) per slice.
3. Use a cookie cutter or the rim of a glass to create round cutouts from the bread slices. You want the cutouts to be about 3-4 inches (7.5-10 cm) in diameter.
4. Place a lettuce leaf on top of each round cutout.
5. Add a few shrimp on top of the lettuce leaf. The amount of shrimp will depend on their size, but aim for about 2-3 ounces (60-90 grams) per serving.
6. Slice the cucumber thinly, about 1/8 inch (3 mm) thick, and place on top of the shrimp.
7. Finish off by sprinkling some fresh dill on top of the cucumber. Use as much or as little dill as you like, but a good starting point is about 1 tablespoon (15 ml) of chopped fresh dill per serving.
8. Serve immediately. Consider adding a slice of lemon on the side for an extra burst of citrus.
