Cod Gratin with Bacon and Leeks

Ingredients
- 450g / 1.1 lbs cod fillet
- 140g / 5 oz bacon
- 475ml / 2 cups heavy cream
- 475ml / 2 cups water
- 2 tablespoons tomato puree
- 2 tablespoons all-purpose flour
- 2 tablespoons fish stock
- 2 tablespoons chopped fresh dill
- 1 small leek
- 1 teaspoon salt
- 1 teaspoon black pepper
Instructions
1. Preheat your oven to 400°F (200°C).
2. Place the cod fillet in a baking dish and sprinkle with salt and pepper.
3. In a separate bowl, mix together 250ml (1 cup) of heavy cream, 60ml (1/4 cup) of water, 120ml (1/2 cup) of fish stock, 2 tablespoons of flour, 2 tablespoons of tomato puree, and 1 tablespoon of chopped fresh dill.
4. Pour the mixture over the cod and bake for 20 minutes.
5. Wash and finely chop 2 medium leeks.
6. Cut 4 slices of bacon into small strips.
7. Cook the bacon and leeks in a skillet over medium heat until the bacon is crispy.
8. Sprinkle the bacon and leek mixture over the cod gratin.
9. Serve with boiled potatoes and fresh tomatoes on the side, cut into wedges.
