Cod Gratin with Herbs and Garlic

Ingredients
- 1.5 lbs (700g) Cod fillet
- 2 cups (475ml) Sour cream, 15% fat
- 2 cloves Garlic
- 2 medium Potatoes, cooked (for serving)
- 1 cup cooked Rice (for serving)
- 3 tablespoons (45ml) Olive oil
- 2 teaspoons Salt
- 2 teaspoons Dried oregano
- 1 teaspoon Dried thyme
- 1 teaspoon Black pepper, freshly ground (approximately 2 pinches or 0.25 teaspoons)
- 1 Fish bouillon cube
- 1 bunch fresh Chives
Instructions
1. Preheat your oven to 425°F or 220°C.
2. Line a baking dish with parchment paper or aluminum foil.
3. In a large skillet, heat the olive oil over medium heat then add the chopped chives and sauté until they soften, about 2 minutes.
4. Next, add the sour cream, dried oregano, and fish bouillon cube to the skillet. Stir everything together and bring the mixture to a simmer.
5. Place the cod fillet in the prepared baking dish and sprinkle it with salt, pepper, and minced garlic. Pour the sour cream mixture evenly over the fish.
6. Now, bake in the preheated oven for about 25 minutes or until the fish is cooked through and the sauce is warm and bubbly.
7. Serve the cod gratin with cooked rice or potatoes and a side salad.
