The sweetness of the apple perfectly balances the sharp kick of horseradish, while fresh dill brings a bright, herbal note that ties everything together. Using surimi crab sticks keeps it easy and unfussy without compromising on taste. It's a simple combination that tastes restaurant-worthy but comes together in minutes with just a handful of ingredients. I love serving it for lunch or a light dinner, especially when I'm craving something special but don't want to spend hours in the kitchen.
Ingredients
  • 200 g (7 oz) surimi crab sticks, chopped
  • 1/3 apple (75 g), finely chopped
  • 1/4 red onion (30 g), chopped
  • 1/3 fresh red chili (5 g), finely chopped
  • 2 tbsp (30 g) mayonnaise
  • 2 tbsp (30 g) crème fraîche or sour cream
  • 1 tbsp (15 g) prepared horseradish
  • 1 tbsp (3 g) fresh dill, chopped
  • 1/2 lemon (30 ml), juiced
  • Salt and freshly ground black pepper, to taste
Instructions

1. In a large bowl, combine the chopped crab sticks, apple, red onion, and chili.

2. In a separate small bowl, whisk together the mayonnaise, crème fraîche or sour cream, horseradish, and lemon juice until smooth.

3. Pour the dressing over the crab mixture. Add the chopped dill, and gently toss until well combined.

4. Season with salt and freshly ground black pepper to taste.

5. Serve the salad chilled or at room temperature, garnished with additional fresh dill if desired. It's delicious on its own or over mixed greens for a more substantial meal. Enjoy!
