Ingredients
  • 250 g all-purpose flour (2 cups)
  • 200 g granulated sugar (1 cup)
  • 125 g unsalted butter, softened (½ cup)
  • 100 g cream cheese, softened (scant ½ cup)
  • 1 large egg, room temperature
  • 1 tsp vanilla extract
  • ¾ tsp baking powder
  • Approx. ½ cup fruit preserves of choice
Instructions

1. Preheat the oven to 180°C (350°F)

2. Line a baking sheet with parchment paper

3. In a large mixing bowl, cream the softened butter and cream cheese together until smooth

4. Add the granulated sugar, vanilla extract, and egg to the bowl and mix until well combined

5. In a separate bowl, whisk together the all-purpose flour and baking powder

6. Gradually incorporate the dry ingredients into the cream cheese mixture, mixing until a dough forms

7. Wrap the dough in plastic wrap and refrigerate for 30 minutes

8. Divide the chilled dough into 16 equal portions and shape each into a ball

9. Using your thumb or the back of a spoon, make a small indentation in the center of each dough ball

10. Fill each indentation with a small amount of cream cheese and your chosen fruit preserves

11. Place the filled dough balls on the prepared baking sheet, leaving about 2.5 cm (1 inch) of space between each

12. Bake for 12 to 15 minutes or until the pastries turn golden brown

13. Keep a close eye on them as baking times may vary depending on your oven
