Creamy Chanterelle Pie with Bacon and Priest Cheese
I love this time of year when the forest is full of hidden treasures like chanterelles. They add such depth to my creamy pie filling especially when paired with the smokiness of a good bacon and a tangy cheese like priest cheese. It's a match made in heaven really - the earthiness of the mushrooms the richness of the cream and the savory flavor of the bacon all come together to create a truly satisfying dish. It's perfect for a cozy night in with friends and family.
Ingredients
  • 8 oz (225g) chanterelle mushrooms
  • 4 oz (115g) priest cheese (similar to Västerbottensost or Prästost)
  • 4 slices of bacon
  • 5 oz (140g) cold butter
  • 2 ¾ cups (315g) all-purpose flour
  • 1 Pastry dough (homemade or store-bought)
  • ½ bunch of fresh parsley
  • 1 tablespoon (15ml) cold water
  • A pinch of salt
Instructions

1. Preheat the oven to 375°F (190°C).

2. Roll out the pastry dough and place it in a pie dish.

3. In a skillet cook the bacon slices over medium heat until crispy then set them aside.

4. Add the chanterelle mushrooms to the skillet and sauté until they release their moisture and start to brown.

5. In a separate bowl mix the cold butter and flour to create a crumbly texture.

6. Add the cooked bacon and mushrooms to the bowl and mix well.

7. Pour in the cold water and mix until the dough comes together.

8. Add a pinch of salt and mix well.

9. Roll out the dough to fit the pie dish and place it on top of the pastry crust.

10. Crimp the edges to seal the pie and cut a few slits in the top to allow steam to escape.

11. Bake the pie for 40-45 minutes or until the crust is golden brown.

12. Sprinkle the Västerbottensost cheese over the top of the pie and return it to the oven for an additional 5-7 minutes or until the cheese is melted and bubbly.

13. Remove the pie from the oven and let it cool for a few minutes before serving.

14. Garnish with fresh parsley and serve warm.
