Creamy Chicken and Bacon Gratin with Parmesan

- 4 boneless chicken breast fillets (1.5 lbs / 680g total)
- 4 slices of bacon (5 oz / 140g)
- 4 tbsp (60g / 2 oz) butter
- 2 cups (250g) freshly shredded Parmesan cheese
- 2.5 cups (315g) fresh broccoli
- 2 cups (200g) fresh spinach
- 1 medium (115g) onion
- 2 tbsp (30ml) olive oil
- 1 tsp (5g) freshly ground black pepper
1. Preheat your oven to 375°F (190°C)
2. In a large skillet heat 1 tablespoon of olive oil over medium heat
3. Add the diced onion and cook until softened about 5 minutes
4. Add the broccoli and cook for an additional 2 to 3 minutes until tender
5. In a separate pan cook the bacon slices over medium heat until crispy
6. Remove from heat and set aside
7. In a large bowl whisk together the softened butter and Parmesan cheese until well combined
8. Add the cooked chicken breast fillets to the bowl and mix until coated with the butter and Parmesan mixture
9. In a greased 9 by 13 inch baking dish arrange the cooked broccoli and onion mixture in an even layer
10. Add the chicken and bacon mixture on top of the vegetables followed by a sprinkle of black pepper
11. Cover the dish with aluminum foil and bake for 25 minutes
12. Remove the foil and continue baking for an additional 10 to 15 minutes or until the top is golden brown
