Creamy Chicken and Feta Cheese Gratin
- 1 ½ cups / 190g chicken breast fillets
- ¾ cup / 190ml mild ajvar
- 1 ½ cups / 360ml heavy cream
- 5 ounces / 140g crumbled feta cheese
- 2 tablespoons / 30ml olive oil
- 1 teaspoon / 5g Chinese soy sauce
- 1 teaspoon / 5g salt
- 1 teaspoon / 2g ground white pepper
- 1 teaspoon / 2g dried oregano
1. Preheat your oven to 425°F (225°C).
2. Cut the chicken breast fillets in half lengthwise if needed.
3. In a bowl whisk together 2 tablespoons of soy sauce 1 teaspoon of salt and 1/2 teaspoon of white pepper.
4. Add the chicken and marinate for a few minutes.
5. In a large skillet heat 2 tablespoons of olive oil over medium-high heat.
6. Add the marinated chicken and cook until browned about 5-7 minutes per side.
7. Transfer the cooked chicken to a baking dish and sprinkle 1/2 cup of crumbled feta cheese on top.
8. In a separate bowl whisk together 1 cup of heavy cream 2 tablespoons of ajvar 1/2 teaspoon of salt and 1/4 teaspoon of dried oregano.
9. Pour the sauce over the chicken and feta cheese.
10. Bake the gratin in the preheated oven for 20-25 minutes or until the top is golden brown and the sauce is bubbly.
11. Remove from the oven and garnish with fresh oregano leaves if desired.
12. Serve with roasted potatoes and a refreshing salad featuring tomatoes cucumbers and red onions.
