My take on a comforting classic - tender chicken filet paired with the deep flavors of a creamy cider sauce and the satisfying crunch of roasted potatoes and crispy bacon, all balanced by a light and revitalizing side salad. This dish is a hearty blend of rich flavors and textures that will leave you feeling cozy and satisfied. Perfect for a chilly evening or a special occasion, it's a recipe that's sure to become a new favorite.
Ingredients
  • 4 chicken breast fillets (1.3 kg / 2.95 lbs or 21.2 oz)
  • 225g / 8 slices of bacon (7.9 oz or 10.6 oz)
  • 115g / 1/2 apple (4 oz or 2.2 oz with core)
  • Oil for frying ( cooking oil)
  • Salt and pepper, to taste
Instructions

1. Preheat your oven to 400°F (200°C).

2. Season the chicken with salt and pepper to prepare it for cooking.

3. Cook the bacon in a large skillet over medium heat until it reaches a crispy texture, then remove it from the skillet and set aside.

4. Using the same skillet, add a small amount of oil and cook the chicken breast fillets until they are browned on both sides and fully cooked. Remove the chicken from the skillet and set it aside with the bacon.

5. Next, add the diced apple to the skillet and cook until it begins to soften.

6. Pour a splash of cider into the skillet and bring it to a simmer, scraping up any browned bits that may be stuck to the bottom.

7. Return the chicken and bacon to the skillet, spooning some of the cider sauce over each fillet.

8. Transfer the skillet to the preheated oven and bake for 10-15 minutes, or until the chicken is fully cooked and the sauce is bubbly.

9. To complete the dish, serve the Bacon Chicken Filet with roasted potatoes and a fresh side salad.
