Creamy Crab Soup with Soft Cheese
Ingredients
- 5 oz (140g) soft cheese with crab flavor
- 2 cups (475ml) water
- 1 cup (240ml) crème fraiche
- 2 tablespoons (30g) butter
- 2 cups (120g) 1 large carrot peeled and chopped
- 2 teaspoons (10g) all-purpose flour
- 2 teaspoons (10g) concentrated fish stock
- 2 tablespoons (30g) crab meat
- 1 bunch fresh dill
- Salt and pepper to taste
Instructions
1. Sauté diced carrot in 30g or 2 tablespoons of butter over medium heat until tender.
2. Add 25g or 2 tablespoons of flour and cook for 1 minute stirring constantly.
3. Gradually pour in 250ml or 1 cup of water and 125ml or 1/2 cup of crème fraiche whisking continuously to avoid lumps.
4. Bring mixture to a boil then reduce heat to 180°C or 350°F and simmer for 5 minutes.
5. Add 125g or 4.4 oz of crab meat 125ml or 1/2 cup of fish stock and 1 tablespoon of chopped fresh dill.
6. Season with salt and pepper to taste.
7. Serve soup hot accompanied by a side of soft cheese with crab flavor.
