Creamy Egg and Shrimp Salad on Toast
Ingredients
- 100 g peeled and deveined shrimp, drained (3.5 oz)
- 2 hard-boiled eggs, coarsely chopped
- 1 apple, diced
- 50 g good-quality mayonnaise (3 1/2 tbsp)
- 50 g light crème fraîche (1/2 cup)
- 2 tbsp chopped fresh dill
- 2 tbsp finely chopped chives
- Salt and freshly ground black pepper, to taste
Instructions
1. 1. Rinse the shrimp under cold water and pat dry with paper towels.
2. 2. In a medium bowl, mix together the mayonnaise, crème fraîche, and a pinch of salt and pepper until combined.
3. 3. Gently fold in the chopped eggs, diced apple, chives, and dill until just combined.
4. 4. Stir in the shrimp, being careful not to break them up.
5. 5. Season the salad with salt and pepper to taste.
6. 6. Serve the creamy egg and shrimp salad on toasted bread, accompanied by a simple green salad and a squeeze of lemon, if desired.
